Flaky Pastry

1 1/4 cups flour
1/2 tsp salt
1/3 cup chilled shortening
1/4 – 1/2 cup ice water
Sift flour and salt into a large bowl. Using a fork or your hands, cut the shortening into the mixture. Add 1 tablespon of water at a time until you can bring it together and knead it. Knead the dough on a greased surface, not floured, else you’ll have to add more water.
Alternatively, sift flour and salt into a food processor. Drop half-teaspoons of shortening in a circle on the flour, and pulse for five-second pulses until the mixture looks like coarse crumbs. Add a tablespoon of water at a time until you can take a handful and it will stay together. (Mixture does not come together in the food processor; that would have too much water.)
Chill for at least an hour before using.
I used this to make Tuna Empanadas.
