Grilled Eggplant & Caramelized Onion Pizza

I love homemade pizza. Once you get past the pepperoni-cheese box then you find an entire world of options. One of my favorites is grilled eggplant and caramelized onion pizza.
I love the sweetness of the onion and the eggplant coupled with fresh tomatoes and lots of spices.
I guess everyone else liked it a lot too, it was gone in a flash..In fact, we generally go through four or five pizzas at a sitting. Cheese for the little kids, generally something off the wall for me, and then pepperoni, jalapeno, and whatever for Marc and the older boys. Once in awhile, like this time, I come up with a combination that they can’t resist and my personal pizza becomes family property!

Grilled Eggplant & Caramelized Onion Pizza
Muir Glen Organic Italian Herb Spaghetti Sauce (or homemade sauce)
1 eggplant peeled if the rind it bitter
1 large white onion
2 tomatoes, sliced
2 Tbs. Frontier Herbs pizza seasoning
2 cups shredded mozzarella
Unbaked pizza crust
Slice the eggplant thin. Rub with olive oil an sprinkle with a little of the pizza seasoning. Grill or pan fry until the eggplant is slightly softened and has begun to brown.
Caramelize the onions in the same pan, using more olive oil if needed.
Slice the tomato
Spread some of the sauce on the pizza crust. Top with eggplant, onions, and tomato.
Sprinkle the pizza seasoning over all to taste. Be careful..this is a spicy mixture.
Sprinkle cheese evenly over the pizza and bake at 375 for about 15 minutes or until done.
Let cool a few minutes before cutting.

I love to make and bake pizzas from scratch too. My favorite is a spinach, ricotta and roma tomato combo. But yours look spectacular!
