When the rep from I Can’t Believe It’s Not Butter contacted me about reviewing a new product I was leary. I mean, I always say use real butter, right?
Well I still think that there is nothing that can compare to real butter. BUT I also know that some of us could stand to lose a pound or two, or ten. Some of you are on special diets because of your health, and some of you prefer to not use butter. I get that.
So, I agreed to try the product.
I Can’t Believe It’s Not Butter Baking sticks work like butter in your baking recipes. They measure the same, they even look the same. But do they work the same?
I chose to make an Earl Grey and Lemon Tea Cake with the sticks I got. A tea cake is simple, the lemon and Earl Grey would be flavorful enough to handle any loss of taste from the lack of butter.
I will post that recipe in a few minutes.
The flavor was great. It held together well and the crust browned nicely. The only thing negative that I can say is that the cake was drier than usual, although not horribly dry. Some of the moistness was gone and I can only attribute that to the difference between the I Can’t Believe It’s Not Butter and the real butter.
I will say that if you are looking at lowering cholesterol and saturated fat in your diet this product is a great way to do it. I would use it again if I was ever concerned about my cholesterol. It has 0 transfats per serving (unlike margarine) and has 3.5 grams of saturated fat to butter’s 7 grams (per serving).
Should you use it?
If you don;t use butter for whatever reason then this is the best substitute that I have tried. It will be available at your local grocer in February.

This is a really interesting idea. I would be willing to give it a try for the health benefits -that would be a driving factor for me. I think it is very cleaver of I Can’t Believe It’s Not Butter to make these baking sticks. Although I have to admit I may be a little hesitant to use in all the recipes where I use real butter.
Kimberly- I understand that! I was impressed though and that is hard to do.
