Baking Delights

Iced Sugar Cookies

I have pictures from before the cookies were baked, but I haven’t yet gotten the pics of them decorated yet, so I promise to update this post once I have them. :D Bear with me; they taste great. ;)

3 1/4 cups flour
1 1/2 tsp baking powder
1/2 tsp salt
1 1/2 cups softened butter
1 cup sugar
1 egg
1 tbsp milk
2 1/2 tsp vanilla

Preaheat the oven to 375 degrees.

Combine flour, baking powder, and salt in a bowl.

In the bowl of an electric mixer, cream butter and sugar. Beat in the egg, milk, vanlla, and (if desired) lemon zest. Add the flour mixture. Divide the dough in half, and between two sheets of wax paper or plastic wrap (I prefer plastic wrap), roll out to about 1/4-inch thickness. Chill for at least half an hour.

Work with one sheet of dough at a time. Cut out with cookie cutters and place on greased cookie sheets.

Bake for 6 to 9 minutes. The top will have colored slightly and the edges will be somewhat darker. Leave to cool for at least five minutes before transferring to racks to cool completely.

Ice with royal icing and decorate as you please :D
