Baking Delights

My Favorite Recipes

Over time (over time, not over the years, because I’ve few not enough years to talk like that, lol), I have stored in my head certain scrumptions recipes that are, for me (or for my family if it’s Mum and not me doing the baking), tried and true and always well worth the effort.

The first that comes to mind are Cream Cheese Brownies, courtesy of The Best Recipe. When I make these (and we, as a family, happen to be in a make-them-last mood), we have to regulate how many each person gets a day. The first time I made this was before we were aware of our food allergies. I never made them often, for they are very rich, but I have made them less often of late, because of our allergies; still, I’d like to add that I cannot think of having any other brownie that could hold a candle to this recipe. I am proud to say that I have actually sold a double batch of these. :D

Every Christmas (since I forget when), we have made Stephanie Schrader’s Walnut Cups. Absolutely delicious. They’re like little pies of sweet-ness and crunchy-ness, perfectly balanced. They’re… not hollow… but, you see, the filling puffs up so that when you bite it, it bursts and collapses, and it’s just… perfect. :D I LOVE the walnuts on top.

And for cakes… NOTHING beats Mum’s Black Forest Cake. There have been a few years when I’ve had store bought cakes or Boca Negra… but only a few. When Mum has time, THIS is the cake I ask for on my birthday. Besides being gorgeous, it’s just totally unbeatable. Layers of cake and cherries and ganache and whipped cream and rum… The cake is not soaked through; just moist enough so that where cake meets cherry filling/chocolate ganache/whipped cream, it just all comes together so perfectly. The chocolate cake + chocolate ganache + chocolate curls are not overwhelming at all. The cherry filling and rum add… just a slightly sour taste and then a bitter one to counter the sweetness. And the whipped cream is light… store-bought icings simply can’t compare to the delightful airiness that the whipped cream adds to the cake.

Betcha’s you’s can’t find recipes that would replace these three as Top in my mind!! :P Labeled – Highly Recommended.

I’m sensing a chocolate theme here. That works–and I love anything with cream cheese.

Thank you very much for submitting this post for the baking fair. Your top three sound wonderful. I think my Mom used to make the walnut cups and I loved them.
