Peanut Butter Filling

Turn Peanut Butter Cookies into Sandwiches!!! Yay. Hahaha. For the peanut-butter-lovers that cannot be satisfied by cookies alone..
3/4 cup confectioners’ sugar
3/4 cup smooth peanut butter
3 tbsp heavy cream
6 tbsp unsalted butter, at room temp
Combine all ingredients in the bowl of an electric mixture fitted with a whisk attachment. Beat at medium speed until light and fluffy, stopping to scrape down the sides of the bowl. Give it a last half-minute at high speed. Use the filling immediately.
With the Peanut Butter Cookies, use about a teaspoon and a half for each sandwich.
