Qucik & Easy Dinner: Hot Turkey Sandwich

About this time of year I seem to spend alot of time sorting through 47 years worth of memories I have stored up. Some of my favorites have to do with food, although my mom was really not a cook, and she didn’t enjoy it very much.

I was an only child and my dad took me out running errands with him ever Saturday morning.  Back then you didn’t go to a superstore to find things, oh no! You went to the hardware store, then to the barber shop, then to the bakery, then to the cleaners…and every place you went, at least where I lived at the time, the shop  owners (who, incidentally actually worked in their own shops) smiled, and chatted and, in the case of the bakery, handed you a cookie, warm from the oven.

After all of that running around we would stop at the diner. Now, a diner, a REAL diner is nothing like McDonalds, Denny’s or Chili’s. A real diner serves food like no where else. Lots of butter, gravy and always a pie of some sort with ice cream on the side….Copious amounts of strong, black coffee…stools that twirl around..and a certain aroma…potatoes, hot grease, coffee and…something else.

And there is nothing like it.

This is classic diner food. Pair with with a scoop of mashed potatoes, a scoop of peas, a roll on the side and a piece of warm apple pie and you are in carb heaven.

I serve it on potato bread…don’t expect left overs.

Hot, Open Faced Turkey Sandwiches

3 lb thin sliced turkey breast from the deli

6 thick slices Potato Bread

2 c cream

1 1/2 c turkey or chicken broth

1/3 c flour

1/4 c butter

4 oz cream cheese

1/2 tsp dry sage

salt and pepper to taste

additions as desired:

sauteed mushrooms

sauteed onions

Melt butter in heavy saucepan over medium heat. Whisk in flour and cook, stirring constantly for about 5 minutes. Add broth, salt, pepper, sage, cheese, and cream, whisking all the while, and simmer until thick and smooth. Add sliced turkey and heat through. Serve steaming hot, over thick sliced of potato bread.

  1. Hot turkey sandwiches were once my favourite lunchtime meal at our local diner. I still have them with leftovers at Christmas. Thanks for the trip down memory lane Marye!

    Mmmmmm…. sounds great! My dad used to take me on Saturday morning errands too…the lumber yard, the barber shop, the cleaners, and occasionally the liquor store. The liquor store was my favorite because they had double-decker shopping carts and my dad would always buy a package of “Beer Nuts” for us to snack on in the car!

    Valli- Yet another area where we are alike! Diners..I wonder why they disappeared in the shadows of Chili’s and boring food like that?
