Quick Microwave Chocolate Fudge Pudding Cake

Microwave? Did I, the diva of domestic dining…the goddess of goodness…Did I say microwave?
Sorry. Sometimes I get carried away.
Seriously, I said microwave.
We generally use our microwave to do important things like melt crayons, melt soap, warm coffee and make the nightly popcorn snack (in a microwave container so I am not ruthlessly denuding virgin forest). However, I have found that there are a few things that microwaves do really well. One is to cause bread dough to rise when you are in an incredible hurry..and the other is to make the fastest desserts in the known world.
Do you remember pudding cake? Surely you do. The stuff you put the batter in the bottom, then sprinkled it with cocoa and sugar, then poured boiling water over and baked it? When you took it out the layers had separated into a warm pudding sauce and a top layer of cake.
What if I told you you can make this very dessert in less than 10 minutes total. Would you be interested?
I knew you would.
What I like about making this in the microwave is that I can make it in individual custard cups and pretty bowls and the presentation is much nicer. If you did this in freezer to microwave dishes I “think” you could freeze them unbaked and microwave as needed but I haven’t tried it yet.
Chocolate Fudge Pudding Cakes
1st Part
1 c flour
1 c sugar
1/4 c dark cocoa
1 tsp baking powder
1/2 tsp salt
1 tsp vanilla
1/4 c unsalted butter melted
1/2 c milk
1 egg
2nd Part
3/4 c sugar
1/4 c dark cocoa
2 c boiling water (or strong coffee)

Mix the flour, baking powder, sugar, and salt in a bowl. Add melted butter, vanilla, milk, and egg. Stir until batter is smooth. Spoon batter equally into 8 individual bowls or in one large casserole.
Mix the remaining cocoa and sugar sprinkle equal amounts on top of each cake. Pour 1/4 c boiling water (or coffee) over each. Microwave 35 seconds each for small bowls, about 8 minutes for large casserole. Watch carefully because it will tend to run over if you don’t. remove while still slightly underdone.
For the glaze:
1/2 c unsalted butter
1 c milk chocolate chips
Melt together in microwave. Stir until smooth and spoon over warm cakes. Garnish with melted white chocolate. Serve warm

This looks so good! Did you know you can make the quickest chocolate cake in the microwave using a brownie mix? It’s a lazy-girl’s dessert.
Try it Linette, it really worked well in the small sizes and it is so quick! I liked the addition of the glaze, it made it richer.
Oh, and if you are a chocoholic we will get along fine.

SOOOOOO delicious, Marye! I used coffee and added a small pinch of cinnamon to the dry ingredients for a mocha version. Then I topped it with whipped cream instead of the white chocolate and Voilà! The perfect comfort dessert!

Oh Mega YUM!!!!! We made this after dinner tonight. I used regular cocoa, since I don’t have the dark. I cooked it in a 9″ glass cake pan… and it boiled all over the place! LOL There was still enough in the bottom to be gooey and yummy! I only had semi-sweet chocolate chips for the sauce, and topped it with whipped cream. I even blogged about it! LOL definately doing it again!
