Rainbow Cookies

Another from the Christmas baking spree. I have major problems with this recipe which comes directly from Epicurious, here.

It is delicious, not that difficult to make, except that the topping hardens quickly and when it’s time to cut the cookies, it’s very difficult to keep the edges clean. The chocolate is too brittle to avoid breakage in spots, so you end up with less-than-perfect diamonds (or squares, as I opted to make). I’m either fiddling with that glaze next time we make it, or opting to spread it on AFTER I cut the cookies. It’s annoying to have messy results when it tastes so good!

Sorry about the pic:( – there’s supposed to be a white layer there; I should have measured more carefully when dividing the batter; it’s way thinner than the green or pink, that’s why you can’t see it.
