Rum Balls

I LOVE rum balls. The flavor of these improves gradually with weeks of airtight storage in the refrigerator. Eventually they’ll get to the point where it feels like it burns your throat (in a good way!!!).

2 cups finely crushed vanilla wafers
1 cup sugar
1/2 cup finely chopped walnuts
1/3 cup melted butter
1/4 cup rum

Powdered sugar

You can do this one of two ways: Either

a) mix all the ingredients, except for the powdered sugar, in a bowl.

or

b) put the uncrushed wafers and unchopped nuts into the food processor. Pulse for five-second pulses until the wafers are finely crushed and the walnuts are finely chopped. :D Add the rest of the ingredients, except for the powdered sugar, and continue pulsing until the mixture comes together.

Roll into 1-inch balls (you can use an ice cream scoop to keep it neat) and roll in powdered sugar. Place on an ungreased baking sheet and let stand for an hour. Re-roll in powdered sugar and place in an airtight container lined with wax paper. Store in the refrigerator.
