Salmon #2: Roasted Bacon-Wrapped Salmon Bites

A really easy dish that you can serve as an appetizer or entree. If serving as an entree, simply cut the salmon fillets into 2-3 inch wide pieces.
1 salmon fillet, cut into 1 1/2 inch cubes, skin discarded or reserved for another use
1/4 cup extra virgin olive oil
Fresh or dried dill for seasoning
Freshly ground black pepper to taste
thin-sliced bacon, about 1/2 lb., depending on size of salmon fillet — cut bacon strips in half
Lemon wedges for serving, optional
Marinate salmon pieces in the extra virgin olive oil for 30 minutes, turning once.
Preheat oven to 375 degrees F. Drain and sprinkle with dill and black pepper to taste. Wrap bacon strip around each salmon piece and arrange on baking sheet about 1 inch apart. Roast/Bake for 15 minutes or until bacon is crisp and salmon is cooked through. Serve hot, with lemon wedges on the side.
If your bacon is a little too thick, pre-cook them halfway in a skillet before using to wrap the salmon, that way they crisp up more during the fifteen-minute sojourn in the oven.
