Mmm..Smoky Smashed Potatoes. Sounds like a perfect dish for the infamous monthly event, Potato Ho Down. Leave it to Cathy to come up with something …errr…unusual for an event name.

we had these the other night with grilled pork chops and tomato vinaigrette with frise lettuce. I promise you it was so good that I can’t remember whether or not I had dessert!

Try to use organics with this. Potato skins are left on and they have a lot of toxin residues if they are not organic.

I should remind you that according to the rules of the event these should be named Duchess Grace’s-

Smoky Smashed Potatoes

  • 4-5 lbs organic potatoes, washed and cut into fourths. Do not peel.

  • 8 ozs cream cheese, cut in chunks

  • salt / pepper to taste

  • 1 cup half and half

  • 1 teaspoon or more chipotle

  • 1 tablespoon Mexican seasoning (or taco seasoning)

  • 2 cloves garlic, chopped

  • 1 onion, chopped

  • 1 tablespoon liquid smoke

  • 1 cup Monterey jack cheese, shredded

  1. Put the potatoes, onion, and garlic in a large saucepan. Barely cover with water and bring to a boil.

  2. Simmer until potatoes are very tender, drain.

  3. Add cream cheese, half and half, chipotle, seasonings, and liquid smoke.

  4. Smash with a potato masher until well blended but potatoes are somewhat chunky..they should not be totally smooth. Stir in Monterey Jack cheese until well blended. Check seasonings and adjust.

  5. Serves 8 to 10.

    Please, some information for the dumb Austrians here – “half and half” is milk, isn’t it? ;-) It sounds delicious although I’ll have to try it without the liquid smoke – we don’t have it over here. But honestly, it sounds a little weird anyways. LIQUID smoke? Brrrr! ;-)

    yay Evi! Someone else who didn’t understand half and half! Marye explained when I asked earlier (for the chocolate pudding) that it’s half cream and half milk. Do I have that right Marye?
    And we don’t have liquid smoke in South Africa either! Going to have to put it on my mother’s shopping list for when she goes to visit my brother in Philadelphia for Thanksgiving!

    South Africa, wow! My sister was there in spring, she was so fascinated by the vegetation and landscape – the pictures were great!

    Evi- yes, half and half is half heavy cream half milk..you can also use all cream or all milk, altho the latter will be less rich. I am so pleased that you like the blog!
    Liquid smoke is a smoke flavoring in liquid form..I am not sure what you could substitute for it? It makes things taste as if they came right off the camp fire!

  16. I’ve never seen it anywhere here, Andre. I’ve been looking out for it ever since I saw it mentioned here. Sounds scrumptuous… There’s a whole new importing opportunity for someone!
