Baking Delights

Stephanie Schrader’s Walnut Cups

Another mainstay in our holiday lineup. I use the handle of a small baby spoon to get the cookie bottoms pressed into the mini muffin tins, and taught Aisa this technique. As you can see, she has done very well! This is a very popular cookie; I know several friends who make it at Christmastime, including fellow foodie blogger Stel of Baby Rambutan.

The recipe can be found at Epicurious. We always double the recipe, as one is never enough. This is almost always the first thing that disappears when we serve it on a dessert tray at parties. People love it!

Epicurious has wonderful recipes. I’m partial to Cooking Light magazine myself, my mother passes me all her old issues and we recycle them in the family–she is too lazy to go through them so I do and then she says, “Wow, where did you get the recipe for this?” and I say, “From the magazine you gave me but never used.”

They’re… not hollow… but, you see, the filling puffs up so that when you bite it, it bursts and collapses, and it’s just… perfect. I LOVE the walnuts on top. [...]
