Roast Apples, Onions, and Thyme

Apples and onions just go beautifully together and if you add a cider-bourbon reduction? Amazing. This is a perfect side dish for Thanksgiving or any autumn meal. It would be great with ham as well. In fact, after I made it I thought that cut in a small dice it would be perfect over grilled chicken breast.
Remember that roasting vegetables gives them a sweetness that can’t be achieved in any other manner.
Slow Cooker Red Cabbage and Sausage

Although it is not quite slow cooker weather here, for many of you it is. Actually, I tend to use the slow cooker all year because it doesn’t heat up the kitchen and it really is a great way to cook meals.
This is so good. You can substitute a good dark ale for the wine if you like with excellent results.
Serve it with a dark rye bread, some sliced Swiss or Gouda, noodles, and you have a great meal happening.

Whiskey Chicken Normandy

I wish I could call this Calvados Chicken Normandy but I can’t. I didn’t have any Calvados but I did have a nice bottle of Crown Royal that a customer gave to Marc a couple of years ago. What can I say? We don’t drink very much.
I wanted to make a cider reduction for this chicken and I thought that the whiskey would give it a nice mellow depth. I was not disappointed at all, and the Hot Pepper Jelly was a brilliant touch if I do say so myself.
