I had no idea what to name these.  First, I thought that peanut butter and jelly bars would be good, but that did not describe the copious amounts of chocolate in these…Peanut butter chocolate bars did not hint at the unrestrained use of Hershey’s Dark chocolate pieces filled with raspberry…So…Name them what ever you like…just try them.

I had an exhausting day of shopping yesterday and ended up getting home late, stressed and ready to tell everyone that if grazing was good enough for the horses it was good enough for them. I hate being rushed, and i hate running late, and I really wanted to make a good meal since we had been having alot of Desperation Casserole lately.

These are really rich with a crumbly shortbread crust and a smooth praline filling with just enough coconut and pecans to add interest. They don’t take long to make and the results are spectacular. For the base: 1/2 c butter softened 1/3 c sugar 1 egg 1 1/4 c flour pinch of salt 1 tsp vanilla Cream butter and sugar until smooth. Add egg and ebat to blend. O.k..if you remember these you are old. If you remember buying them for 15 cents at the local store that carried everything from pickles in a barrel to PDQ and Bosco then you are as old as me.
  This is a bar cookie that I really don’t see much anymore. It is wonderful…close to the candy bar in flavor AND would be perfect for the Blog Bake Sale. You ARE doing that right? You HAVE gotten involved?
