I love homemade pizza. Once you get past the pepperoni-cheese box then you find an entire world of options. One of my favorites is grilled eggplant and caramelized onion pizza.
I love the sweetness of the onion and the eggplant coupled with fresh tomatoes and lots of spices.

This is my entry for Ruth’s Presto Pasta night!Hey I am getting good, two weeks in a row.
This was inspired by the fact that I had an eggplant in the fridge that was threatening to grow fuzz, a few leftover mushrooms, and a can of artichoke hearts.
