<p>Meatballs are great homemade, but if you can get good ones that are frozen they can be a great last minute meal. I decided to make the <strong>Saucy Meatball Grinders</strong> from the cookbook, which is called <a href="http://www.amazon.com/101-Things-Meatballs-Stephanie-Ashcraft/dp/1423605888">101 Things to Do with Meatballs</a>. I did get permission to give the recipe in its&#8217; entire form, so I made it exactly from the book</p>

<p>First of all, since the meatballs were all ready done it was a simple and very fast meal.The meatballs were a nice size and they were pretty good. Not at all greasy and didn&#8217;t have that funny texture that some frozen meatballs do.</p>

<p>The sandwiches were wonderful, and the entire meal, for 16 people by the way, was done in under 30 minutes. I loved it. Everyone loved these meatball sandwiches and thought the meatballs were good.</p>
<p><strong>Saucy Meatball Grinders</strong></p>
<ul>
<li>14 oz pizza sauce (I used Newmans Own Sockarooni)</li>
<li>1/4 cup apple jelly</li>
<li>1/2 teaspoon Italian seasoning</li>
<li>1/2 teaspoon salt (I omitted)</li>
<li>1/2 tsp black pepper</li>
<li>30 FarmRich frozen meatballs</li>
<li>6 hoagie rolls, split</li>
<li>1 cup grated mozzarella cheese</li>
</ul>
<ol>
<li>Combine all sauce ingredients in a pan. Warm up, stirring, until smooth and the sauce begins to simmer.</li>
<li>Carefully add meatballs.</li>
<li>Cover and simmer about 20 minutes, or until meatballs are heated through.</li>
<li>Preheat oven to 375F</li>
<li>Place 5 meatballs in each roll. Spoon sauce over and sprinkle on cheese.</li>
<li>Heat until the cheese is melted.</li>
</ol>
<p>Serves 6</p>
<p>I tripled the recipe, obviously. Personally, I love homemade meatballs but I will keep a bag of these on hand for those times when I need an &#8220;instant&#8221; meal.</p>

<p>On the boxes it says that the product can be microwaved so I took one panini and one quesadilla out to microwave them</p>
<p>This is what I got:</p>

<p>Don&#8217;t try this at home, kids.  Seriously?  It only takes about 20 minutes to bake the things in the oven.  Don&#8217;t microwave them.  They come out soggy and chewy.</p>
<p>BUT&#8230;.Bake them and you end up with a really good snack/lunch/light dinner item.</p>

<p>That is the chicken panini with the artichoke pesto.  Again, very good when baked.  Both items had a generous amount of cheese and chicken, and other ingredients so you weren&#8217;t just biting into dough.  The crust was flavorful, not too salty, and had a nice texture.  The family was pretty equally divided on which of the two was best, with slightly more of my family liking the quesadillas.</p>
<p>The quesadillas do have some heat to them, and the jalapenos are pretty generously sprinkled in there.  These would work great for the Super Bowl table, a quick lunch with a soup or salad, or just about anything you wanted.</p>
<p>I liked them and I would buy them.  On a scale of 1-10 I give them a 7.  Why a 7?  Because the box says you can microwave them and if you do you will be disappointed.  Those people who don&#8217;t read Baking Delights (can you imagine that there ARE people who don&#8217;t?)  will not know that microwaving these is a mistake.</p>
