I Have Perfected Vegetarian Pizza

Seriously, I have.
This one was amazing with portobello mushrooms, roasted red peppers, onions, and yeah..a little chipotle. I can’t get past that spicy, smoky combo!
I have found that by letting the pizza crust rise in the pan, baking at 500F on a stone until done, and then adding ingredients and baking at 375F until cheese melts I end up with crispy, chewy, yummy crust.
Adding 1-2 tablespoons straight gluten flour to your pizza crust recipe will also give you that awesome chewy crust.
You can use homemade sauce or Newmans Own Sockarooni. I love that stuff. Use a combination of cheeses:
Fontina
Mozzarella
Romano
Provolone

Of you are looking for cheap desserts, Depression style rice tart can fit the pie pan.
Seriously, I am looking through my vintage cookbooks more and more these days, especially those published around the time of the Depression through World War II. Those women had to feed their families on limited funds and limited ingredients. More and more, as grocery prices seem to swing out of control I find that these old recipes work great for me.

Cheap Eats: Picante Chicken

This is another one of those super easy meals that is absolutely delicious but doesn’t look beautiful plated. I know. It is just the way it is. Some of the best recipes I have are not photogenic.
Picante chicken is the simplest stuff in the universe. It is perfect for Once a Month Cooking (OAMC) and making ahead. I made a batch of it prior to my surgery. You just buy chicken breast, toss it in a freezer bag, cover with picante sauce and throw it in the freezer….Raw.
