I have leftover scrambled eggs from our church potluck and agree that frugal is cool. So I am going to try to mix them into a tuna salad sandwich filling. Maybe I could make an egg salad with scrambled eggs!

How timely:) We are part of our county mosquito abatement program. Each year we get 10 new hens. We act as the staging area which means they bring about 50 hens to my house overnight then they process them and send most to other coops in the county. Check this URL

This year we are "fostering" all the hens, around 50, for over a week. Needless to say I am up to my eyeballs in pullet eggs. Pound cake is one of my favorite ways to use eggs because I can freeze it. I'll have plenty of eggs to try a lot of the recipes you have posted. Thanks

You got a great round up here. I made something but didn't like it so I didn't enter. Remember its quality, not quantity.
