My sister sent me this recipe for Chocolate Chip Pumpkin Bread yesterday (that’s her picture too) and it couldn’t be easier. Seriously – you mix it all up and go!
It translates pretty well into muffins (I can’t find my bread pans! Probably still in a moving box), just don’t bake them for as long, or you can use mini loaf pans too (it makes about five).
Chocolate Chip Pumpkin Bread
2 c flour
2 tsp baking powder
½ tsp baking soda
1 tsp salt
1 tsp cinnamon
½ tsp nutmeg
1 c canned pumpkin
1 c sugar
½ c milk
2 eggs
½ cube soften butter
1 c choc chips
Mix until blended, then bake in greased pans at 325° for 45-55 min until done.

Yum, sounds really good.

Hey Heather! Oh no, I’m never good at these things. I’ll try and throw something together though! Thank you for tagging me!
Yummy. I can’t wait to try this recipe!
I’m sorry, this may be a really stupid question but what size can of canned pumpkin? and what’s 1/2 cube of butter?
nevermind figure out one cup of canned pumpkin, what is a cube of butter a stick?
Sarah – yeah, sorry – it’s half a stick. My sister wrote the recipe and I went by the cube = stick and it worked
Thanks so much! lol
