Chocolate Rice Pudding

Rice pudding seems to be something you either love or hate. Admittedly, I didn’t like it much as a kid but don’t mind it now. I made some for my husband last night and decided to experiment with some chocolate (surprise!).

Chocolate Rice Pudding

3 cups milk
2/3 cup uncooked long grain rice

1/4 cup sugar
1 tsp vanilla extract
1/2 c chocolate chips (semi or milk, your preference)

In a heavy medium saucepan bring the milk just to boiling, stir in the rice. Cover and cook over low heat for 30-40 minutes or until most of the milk is absorbed, stirring occasionally.

Remove saucepan from heat and stir in the sugar and vanilla extract. Add chocolate chips and stir until melted. Serve warm or chilled.

  1. Me… I have always loved rice pudding, but I’ve never thought of the chocolate variety. Hmmm, I have some chocolate chips in the pantry!!

    Oh YUM. I love rice pudding anyway but with chocolate added? I must try that!
