Yes, another yummy national (but not) holiday!

Today is National Buttercrunch Day. I had to look this up because while I had an idea of what it was I wasn’t sure, and it turns out I was right. I was happy to see chocolate usually plays a part and that it can be incorporated into pies, cookies, cakes or it can just be a snack on its own.

A friend of mine posted a link to a recipe not too long ago for “mock Skor bar,” and after I did a little bit of poking around to see what went into buttercrunch I realized it’s pretty much chocolate covered buttercrunch, and they’re delicious! The best part is the “secret ingredient” — soda crackers!

Chocolate-covered Buttercrunch Bars

24 regular salted soda crackers
1 cup butter
1 cup brown sugar
1 cup semi-sweet chocolate chips

Preheat oven to 350 degrees. Line a 13 x9 inch pan with aluminum foil or Parchment paper for easy clean up. Arrange crackers evenly in pan.

In saucepan over medium heat melt butter. Stir in brown sugar until melted and smooth. Bring mixture to a boil stirring constantly until mixture is smooth and bubbly. Boil for 2 minutes and then pour mixture evenly over cracker.

Bake in oven for 5 minutes. Sprinkle chocolate pieces evenly over caramel mixture. Return to oven just long enough for chocolate to melt. Spread chocolate evenly with spatula.

Place pan in refrigerator or freezer until chocolate is firm. Cut or break into pieces. (Cooking time is cooling time.)

    buttercrunch is really very very delicious…its taste is great. The ingredients are good and it’s not harmful to our health.

    Yum, that looks wonderful. I want some! I just made something similar this past Sunday but used graham crackers and sprinkled pecans on top before popping it into the oven! Your way, my way either way it’s DELISH!
