Hi Helen! The recipe I use just happens to not call for cooked eggs. When I use raw eggs in an ice cream recipe, I use an equivalent amount of Egg Beaters.

why is it that you don’t have to cook the eggs as in a custard?
Could one use low fat yogurt for part of the cream?
