While doing some of my blog rounds I came across something at Baking Bites that made me extremely happy: homemade Girl Scout cookies, specifically, homemade Tagalongs! Don’t they look amazing?
Homemade Tagalongs (a.k.a. Peanut Butter Patties)
Cookies
1 cup butter, soft
1/2 cup sugar
2 cups all purpose flour
1/4 tsp baking powder
1/2 tsp salt
1/2 tsp vanilla extract
2 tbsp milk
Preheat oven to 350F. In a large mixing bowl, cream together butter and sugar. Mix in flour, baking powder and salt at a low speed, followed by the vanilla and milk. The dough should come together into a soft ball.

Oatmeal Chocolate Chip Cake Mix Cookies

Oatmeal Chocolate Chip Cake Mix Cookies
1 (18.25 ounce) package chocolate chip cake mix with pudding
2 eggs
1/2 cup vegetable oil
1/2 cup raisins
1/2 cup rolled oats
1 cup mini semi-sweet chocolate chips
Preheat oven to 350 degrees F (175 degrees C). Mix together the cake mix, eggs, oil, raisins, oatmeal and chocolate chips. Stir well. Drop by teaspoonful onto a greased or parchment lined cookie sheet. Bake for about 8-10 minutes. Remove from oven and let cool for 1 minute before removing from cookie sheet.

Chocolate Chunk Cookies

Chocolate Chunk Cookies
16 oz semi-sweet baking chocolate, divided
3/4 cup firmly packed brown sugar
1/4 c butter or margarine, softened
2 eggs
1 tsp vanilla
1/2 c flour
1/4 tsp baking powder
2 cups chopped nuts (optional)

Heat oven to 350 degrees. Coarsely chop 8 oz of the chocolate; set aside.
Microwave remaining 8 oz of chocolate in large microwaveable bowl on high 1 to 2 minutes. Stir until chocolate is melted and smooth. Stir in sugar, butter, eggs and vanilla with wooden spoon until well blended. Stir in flour and baking powder. Stir in reserved chopped chocolate and nuts. Drop by scant 1/4 cupfuls onto ungreased cookie sheet.

Oatmeal Chocolate Chip Cookies

My daughter brought home a note from her teacher yesterday requesting cookies for an end-of-year school party tomorrow. It was short notice but I was able to go with an old standby: oatmeal chocolate chip cookies.
Oatmeal Chocolate Chip Cookies
1/2 cup shortening
1/2 cup unsalted butter
3/4 cup packed brown sugar
3/4 cup white sugar
2 eggs
1 tsp vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups rolled oats
2 cups semisweet chocolate chips
1. Preheat oven to 350 degrees F (180 degrees C).
2. In a large bowl cream shortening, butter, vanilla, brown sugar and granulated sugar. Add eggs and mix thoroughly.
