6 chocolate chip cookies
Mint chocolate chip and/or vanilla ice cream
Black and orange sprinkles, colored sugars or other Halloween cookie decorations

<p>6 chocolate chip cookies<br />
Mint chocolate chip and/or vanilla ice cream<br />
Black and orange sprinkles, colored sugars or other Halloween cookie decorations</p>
<p>~ If cookies are homemade, make sure they&#8217;re completely cooled before preparing ice cream sandwiches.</p>
<p>~ Soften ice cream at room temperature about 10 minutes or in microwave oven on medium (50%) for 10 to 20 seconds.</p>
<p>~ For each ice cream sandwich, place about 1/4 cup (1 small scoop) ice cream on flat side of one cookie; top with another cookie and press gently so that ice cream meets edges of cookies.</p>
<p>~ Immediately roll edges of ice cream in decorations, if desired.</p>
<p>~ Wrap in plastic wrap; freeze until ready to serve.</p>
<p>~ Six cookies makes three sandwiches.</p>

From then on, whenever we had the opportunity to order our own flavor of ice cream, that was my first choice.

<p>I had my first taste of it as a kid when my family went on a road trip to Indiana to visit relatives for the summer. It was the most amazing thing ever &#8211; <strong>chocolate ice cream</strong>, <strong>marshmallows</strong>, <strong>chunks of fudge</strong>, and <strong>nuts</strong>. Later, the walnuts would be replaced by pieces of toasted almond.&#8221;</p></blockquote>
<p>Having been created right at the brink of the <strong>Great Depression</strong>, the ice cream was actually given the name &#8220;rocky road&#8221; to give people <strong>something to smile about</strong>.</p>
<p>And, in honor of today being <strong>Rocky Road Ice Cream Day</strong>, make some of your own! If you don&#8217;t have an ice cream maker, simply allow a quart or two of chocolate ice cream to soften just a bit. Put it in a larger bowl or mixer bowl, and add marshmallows, chocolate chips and nuts and mix just enough that it&#8217;s combined, and refreeze.</p>
<blockquote><p><strong>Homemade Rocky Road Ice Cream</strong></p>
<p>2 cups heavy cream<br />
1 cup half-and-half<br />
1/3 cup sugar<br />
dash salt<br />
6 oz milk chocolate, melted<br />
4 oz Egg Beaters, or egg substitute<br />
2 tsp vanilla extract<br />
½ cup toasted chopped nuts<br />
¼ cup miniature chocolate chips<br />
½ cup miniature marshmallows</p>
<p>Heat cream, half-and-half, sugar and salt in a small saucepan until sugar dissolves. Add melted chocolate and stir to combine. Remove from heat and place in a pan of cold or ice water to cool to room temperature. </p>
<p>Strain chocolate mixture into a blender or food processor; add Egg Beaters and vanilla. Process until smooth.<br />
Chill until ready to freeze. </p>
<p>Pour into the ice cream maker and follow the manufacturer&#8217;s instructions for freezing. About a minute before ice cream is finished, add nuts and chocolate chips and freeze for another minute. When ice cream is frozen, fold in marshmallows. Makes: about 1 quart</p></blockquote>

On November 4th, Ben &#038; Jerry&#8217;s Scoop Shops around the U.S. will be giving away free scoops of ice cream. Just show them your &#8220;I Voted&#8221; sticker, a photo of you in front of your polling station, do the &#8220;I Voted dance&#8221; (ha!) or just tell them you voted. 
There are 430 Scoop Shops in the U.S., and you can find one nearest to you here.
My favorite Ben &#038; Jerry&#8217;s ice cream flavors are Cookie Dough and New York Super Fudge Chunk. What are yours?

It&#8217;s National Soft Ice Cream Day, so I thought I&#8217;d share a new recipe. I don&#8217;t have any pictures of my usual ice cream process because the lid of my ice cream maker was overly-cuddled by one of the cats, who ended up knocking it to the floor where it didn&#8217;t survive. 
So while I wait for the replacement lid to finally make its way out of New Jersey and to the desert southwest, I&#8217;ll leave you with the amusing picture above and a quick, no-maker-needed recipe for soft chocolate ice cream. <p><strong>Soft Chocolate Ice Cream</strong></p>
<p>1/2 gallon chocolate milk<br />
1 can (14 oz) sweetened condensed milk<br />
1 large (16 oz) carton whipped topping (Cool Whip)</p>
<p>Mix the condensed milk and whipped topping, stirring gently. Slowly stir in chocolate milk. Pour in gallon freezer bag and freeze. Makes 1 gallon.</p>
