Each recipe can easily be tinted with just a bit of green food coloring (I prefer the gel).

White Chocolate Buttercream Frosting

6 oz. white baking chocolate, chopped
1/4 ccup heavy cream
1 cup butter
1 cup powdered sugar

Stir white chocolate and whipping cream in a double boiler until melted and smooth. Cool. Add butter and sugar, beat on high until light and fluffy. Makes about 3 cups. Keeps well in refrigerator.

…..

White Chocolate Frosting

3 egg yolks, beaten
1 cup sweetened condensed milk
1 cup sugar
1/2 cup butter, melted
4 oz. white chocolate, grated

Combine first 4 ingredients in top of a double boiler; bring water to a boil. Reduce heat to low; cook until thickened, stirring constantly. Add chocolate; stirring until chocolate melts and mixture is smooth.

Happy St. Patrick’s Day! While surfing around for something to do with the kids today (it being both spring break and St. Patrick’s Day), I came across this from Instructables: St. Patrick’s Day Chocolate Shamrocks.
We don’t have a vacuum former to make molds but if I think about it in time next year I’m sure I could buy some ahead of time!

Strawberries, bananas, pineapples, apples, pretzels for dipping

Make a ganache: In a non-reactive double boiler set over medium-low heat, bring the cream, sugar, and butter to a boil. Meanwhile, chop the chocolate into small chunks – a serrated knife works best for this.

Add the chocolate chunks to the cream mixture in the double boiler, whisking, until it is melted and incorporated into the cream. Finally, add the food coloring until it is the desired shade of green.

Keep mixture warm in a fondue pot. Set out the fruit and the pretzels for dipping with long wooden skewers next to the fondue pot. Guests can dip their pretzels or fruit into the fondue.

As the 17th of March drew closer, I looked for inspiration at my favorite Irish pub in Manhattan. As I savored my pint, I saw a Guinness poster that said, “My Goodness, My Guinness!” It was like an angel sang in my ear: “What if you combined a dark chocolate pudding and Guinness, topped it with whipped cream lightly flavored with Guinness, and then put it in a glass to make it look just like a pint of the black?” After a few failed attempts, I got it just right.
