I usually like to add a little bit of brown sugar and a teaspoon or so of vanilla as well. It makes it a little more like a giant cookie, and the sugar helps it brown up a bit more too.

Chocolate Chip Belgian Waffles

2 cups flour
1 cup chocolate chips
2 tsp granulated sugar
1 Tb baking powder
1/2 tsp salt
1/2 tsp cinnamon
1-2/3 cup milk
1/3 cup melted butter
2 eggs

~ In a large bowl, combine flour, chocolate chips, granulated sugar, baking powder, salt and cinnamon.

~ Add milk, melted butter and eggs and mix until moistened. Some lumps may remain.

~ Spread one cup of batter into the waffle baker. Close the top and rotate the baker and cook for 3 minutes and 45 seconds. Repeat with remaining batter. Serve immediately with syrup, while they are still warm.

As the unofficial start of summer, it means hauling out the barbecue, whipping up batch after batch of fresh ice cream, working on the yard, spending time with family and friends, and endless hours in the sun.
