White Chocolate

whitechocOutside, as I write this, we are getting our first snowfall of the winter. Not much, but enough to leave a light dusting of white everywhere. Which makes me think of white chocolate. While not my favourite form of chocolate, I do eat some. But what is white chocolate, really? Does it come from an albino chocolate bean?

Turns out white chocolate isn’t really true chocolate at all. It contains no chocolate liquor, and therefore little chocolate flavour. The chocolate flavour it does have comes from cocoa butter. Usually white chocolate is made by combining cocoa butter, sugar, milk solids, lecithin, and vanilla.

Add to this the fact that some products that look like white chocolate aren’t even that. Sometimes they contain no cocoa butter at all. The label will probably say that they are artificial chocolate or confectionary, meaning of course that they are just candy and won’t taste like white chocolate.

So the next time someone tells you that they like white chocolate the best of all chocolates, you can tell them how wrong they are!

  1. Consumers would like to know if the white chocolate was imported. If it was made in the USA were there imported ingredients? Perhaps it is time for corporations to be concerned about what consumers expect, since Topps was sued out of business within 6 days of the recall.
