Do you like vanilla? Who doesn’t? Do you like small cookbooks that feature a particularly pleasant ingredient, like say…vanilla?

Then you might be interested in this delightful cookbook about Nielsen-Massey Vanillas, called A Century of Flavor. Since 1907, the family has been making vanilla extracts from the exotic vanilla orchid beans. This cookbook combines family recipes from the Nielsen family collection with some recipes provided by a star-studded cast of celebrity chefs, including Rick Bayless and Marcy Goldman
One of the things that struck me most was the diversity of recipes that can be enhanced by extracts. I always think immediately of baked goods, but one of the recipes that I can’t wait to try out is by J. Warren, called Cherry Vanilla Chicken a la Nielsen!
This vanilla-inspired cookbook, published by family-owned Nielsen-Massey Vanillas, celebrates the exciting nuances of one of America’s most-loved and versatile ingredients – pure vanilla. It is filled with 50 of the most tantalizing recipes, highlighting the intricate, yet delicate flavors of pure vanilla and is written for the novice cook as well as the seasoned chef.

Here’s the boring answer: I like adding a little extra to cookies.
Here’s the less boring answer: Vanilla extract tastes horrible straight out of the bottle and I was never big on “washing kids mouths out with dishsoap.” Do you see where this is going? I’ve used vanilla as punishment before….because hey, it just doesn’t taste the same as vanilla ice cream and they weren’t expecting it at all, lol. Powdered ginger works, too.

Basically, I look for recipes that require vanilla
I love hot cocoa but avoid sugar, so I make my own with good quality unsweetened cocoa powder, splenda, milk, good quality vanilla, and a dash of cinnamon. It is not the same without the vanilla. And I wouldn’t even consider using artificial vanilla flavoring, in any of my cooking or baking!
I love to use it in pumpkin apple cupakes
I make zucchini bread for my nephew–he is three and is not a veggie lover. I double the amount of zucchini and lessen the amount of sugar a bit. The recipe calls for 5 tbsp of VANILLA. This bread is out of this world. My nephew is getting veggies but he thinks that he is the one who is getting away with things because of the fact that he won’t eat veggies. Little does he know.
it adds such a great underlying flavor to any cheesecake! they just wouldnt be the same without vanilla!
My favorite use for vanilla is when I’m decorating cakes. I love making vanilla flavored butter cream icing, but I also love to use a drop or two of vanilla for glue when I’m working with fondant. It works great to “glue” two pieces of fondant together when I’m making flowers or other fondant and gumpaste shapes.
I know it sounds so vanilla, but i basically only use vanilla in my baking. I have been noticing that chefs have been adding vanilla to savory dishes, but I still don’t know how to do it … Or what combination would be good.
My favorite use of vanilla is sniffing it every time I open it for a recipe! It’s part of the opening-the-bottle-motion; I love that smell.
Vanilla is my favorite and I love it in banana smoothies, for baking and in French toast, but my favorite, decadent use of vanilla is to put a little in a pan of water with just a touch of cinnamon, turn on the burner for a short time and make the house smell yummy!
