Why have I never brined my poultry before? Lazy lazy, shame on me. Well, no more…I promise. Brining is so easy, and it makes the chicken or turkey taste amazing. For a 6 to 8 pound roasting chicken, you simply soak it in a pot of water that contains about 1-1/2 cups each of salt and sugar, some crushed garlic, and some crumbled bay leaves for a couple of hours prior to cooking.

There are so many soups, stews, broths, and brines that call for herbs that must then be fished out of the mix. Even this simple poultry brine calls for crumbed bay leaves. Usually I tie them into a small piece of cheesecloth, but check out this Jumbo Herb Infuser as an alternative! Plenty of room for expansion, even if you’re making a jumbo pot of tea. The infuser is 4-1/2 inches long and has a hook and chain so it won’t get lost. About $8.

You are in New England and do not use this?

My father REQUIRES this in his brine.
Ah, but I am not *from* New England! Plain old salt, sugar, garlic, and bay for me
I’ll try Bell’s next year…promise!
