Not a Veggie Lover? Help is on the Way!

Great news for all you veggie-haters out there. Japanese and American scientists have found and analyzed the food compounds that make some vegetables seem to carry a bitter taste (a major reason why many people avoid that food group). These compounds are known for activating people’s bitter-taste receptors, leading researchers to look for a way to minimize this effect and get you on the veggie train in a hurry.

So how do these hot shots plan to take you from “ketchup is my favorite veggie” to “bring on the asparagus”? They plan to introduce a second compound to produce that could inhibit these bitter-taste sensors, that’s how. Brilliant!

A mere five years is all we might have to wait to see less-bitter veggies and other products hit the market. Seems like a while, but after a lifetime of shunning broccoli, it’s surely not.
