Allergy-Free Baking, Part 2 (Namaste Spice/Carrot Cake)

Baking from mixes definitely has its pros and cons. I like the ease of it, no measuring, no buying separate ingredients. What I don’t like is that I can’t customize it if I don’t quite like how it turns out.
As I wrote previously, the cake I made this weekend for my son’s birthday party was from Namaste. The mix itself is wheat-free, milk-free and egg-free. The instructions do say to add eggs. To make it truly egg-free, I used Ener-G Egg Replacer.
So how did it go?
My firstborn likes it.
For the more discerning tastes of adults, it was just OK, considering that it was wheat-free. The texture was more rice cake-like than true cake. And again, like the Vanilla Cake, it was too sweet. Something not helped by the icing. I’ll probably go back to hunting for a better cake mix than this.
As for the decoration, you can see that I did go with the party theme. I iced the cake, planning to just zip to the store real quick to buy some Winnie-the-Pooh cake toppers. But my hubby remembered a little plastic Pooh bear toy that the boys have. So I cleaned it up real well, plugged up the hole at the bottom using a ball of foil, and set it lightly on the top of the cake.
All in all, I’m happy with this cake.
