Cheesy Chicken Enchiladas Recipe

Last month, we had Mexican Fiesta Week and somehow this recipe for chicken enchiladas was not included. I won’t hold out on you any longer. These chicken enchiladas are yummy.

- 1 large carton sour cream
- 2 large chicken breasts or canned chicken, chopped
- 1 small can of green chiles
- 1 package of dry ranch mix
- sprinkle of red pepper
- 4 oz (1/2 pack) of cheddar cheese
- 8 oz (1 pack) Mexican cheese
- 18 pk of flour tortilla shells
- 1 large can of enchilada sauce
In large mixing bowl mix sour cream, chicken, red pepper, dry ranch mix, green chilies, and cheese (set aside some cheese for topping). Put 2 tablespoons of mix in each tortilla shell. Roll up the tortilla shells and line them in a greased dish. Pour enchilada sauce on top. Bake at 350F for 40 minutes. Top with cheese and bake until cheese is melted.
In case you’re wondering, yes these are fattening. I’m sure you could buy whole wheat tortilla sheets, lowfat cheese, and lowfat sour cream to cut out some calories.
