Chicken Spaghetti Casserole

The words “spaghetti” and “casserole” are not ones I would put side by side very often. But I’ve consciously decided to broaden my cooking and try out more new recipes and cuisines. This recipe by Tish Harper, owner of a catering company, looks intriguing and easy enough to try.

Chicken spaghetti casserole

1 (8 ounce) box spaghetti

1 small onion, chopped

1 cup sliced mushrooms

1/4 cup butter or margarine

1/4 cup flour, plain

1 teaspoon salt

1 teaspoon poultry seasoning

1/4 teaspoon pepper

2 cups chicken broth

1/2 cup whipping cream

3 1/2 cups cooked and chopped turkey or chicken

1 cup shredded cheddar cheese

Preheat oven to 350 degrees. Cook spaghetti according to package directions. Rinse and drain. Saute onions and mushrooms in butter. Add flour, salt, poultry seasoning and pepper. Cook for 1 minute. Stir in broth and cook until thick. Stir in whipping cream and add meat.

In buttered casserole dish, layer spaghetti with chicken mixture, ending with chicken on top. Bake 20 minutes. Remove from oven, sprinkle with cheddar cheese and bake 5 minutes more, or until cheese melts.
