Cornflake Chicken

cornflakechickenHere’s an easy and tasty twist to fried chicken. It’s called Cornflake Chicken, and you’ll find out why:

Ingredients:

2 cups plain cornflakes, crushed
1 tablespoon flour
salt and pepper to taste
1 egg (beaten)
chicken pieces for frying
1 cup vegetable oil

Mix the crushed cornflakes, flour, salt and pepper in a platter. Beat the egg in a separate container.

Dip the chicken pieces in the egg. Dredge in the cornflake/flour mixture, pressing the mixture to help it adhere. Fry in hot oil over medium heat until cooked and the coating is medium brown.

For an egg-free recipe, use the following as egg-replacer: Whisk together 3 tablespoons vegetable oil, 3 tablespoons water, and 2 teaspoons baking powder.

  1. I have actually tried cooking with corn flakes as a coating for chicken and pork, and I have to say that the results are excellent! I’ve not tried fried chicken in this manner (only baked), but will do so this week. Thanks for the recipe!

    Hi Gina, I’m glad you like it! It’s really good, and so far, error-proof for me. :) I tried it baked too, and it’s also yummy. Not as greasy/juicy as frying, and easier too.
