Cornflake Chicken
Here’s an easy and tasty twist to fried chicken. It’s called Cornflake Chicken, and you’ll find out why:
Ingredients:
2 cups plain cornflakes, crushed
1 tablespoon flour
salt and pepper to taste
1 egg (beaten)
chicken pieces for frying
1 cup vegetable oil
Mix the crushed cornflakes, flour, salt and pepper in a platter. Beat the egg in a separate container.
Dip the chicken pieces in the egg. Dredge in the cornflake/flour mixture, pressing the mixture to help it adhere. Fry in hot oil over medium heat until cooked and the coating is medium brown.
For an egg-free recipe, use the following as egg-replacer: Whisk together 3 tablespoons vegetable oil, 3 tablespoons water, and 2 teaspoons baking powder.

I have actually tried cooking with corn flakes as a coating for chicken and pork, and I have to say that the results are excellent! I’ve not tried fried chicken in this manner (only baked), but will do so this week. Thanks for the recipe!

I tried it baked too, and it’s also yummy. Not as greasy/juicy as frying, and easier too.
