Quick Italian Sausage Pasta Recipe

I found this photo on my camera today. It’s a lunch that I made on the fly a few months ago. Everything can be done in the time it takes to cook the pasta.

Italian Sausage over Pasta

3 tablespoons olive oil
2 cloves garlic, chopped
1 small onion, chopped
2-4 links sweet Italian sausage
1 green bell pepper, chopped
2 Roma tomatoes, chopped
oregano to taste
cooked fettucine

Heat olive oil in pan. Saute garlic and onion in hot oil until onion is transparent. Squeeze the sausage out of the links, straight into the pan, and cook until brown. Add bell pepper and tomatoes. Season with oregano. Cook until peppers are done but still crispy. Serve hot over cooked noodles.

I find that the sausage is seasoned just enough, but you can add some salt and pepper if you want. You can also adjust the olive oil if you want a more or less moist dish.
