Stuffed Meatloaf from Simply Recipes
After writing the post about sneaking vegetables into kids’ meals, I read this recipe for Meatloaf Stuffed with Spinach and Red Bell Pepper on Simply Recipes. The finished product looks great, with the colorful center. And I’m loving the thought of how the red bell pepper tastes (yum!).
The recipe calls for ground veal. One of the commenters on the post suggests a “1/3 mixture of ground beef, ground pork, and ground veal”. Whatever your recipe is for meatloaf, adding the red bell pepper and spinach stuffing could make it even better.
