Keeping the Castle

Taco Soup Recipe

We’re still celebrating with Mexican food week at Keeping the Castle.  Here’s a recipe for some yummy and easy taco soup.  My husband says that this is not taco soup.  He says it is taco chili.  lol I have no clue where the original recipe came from because I have seen it all around the internet.

You’ll need:

  • 1 lb ground beef or ground turkey
  • 1 onion, diced
  • 1 package dry taco seasoning
  • 1 package dry ranch salad dressing mix
  • 2 cans pinto beans
  • 1 can kidney beans
  • 1 15 oz can of corn, drained
  • 3 cloves garlic, minced
  • 2 cans Rotel tomatoes with green chilis
  • Adobo seasoning (or salt and pepper) to taste

Brown ground beef with onion and drain.  Add remaining ingredients and simmer until hot.  Serve with sour cream, cheese, and tortilla chips.
