Cooking with a Little This and That

Many times when I go to a party, potluck or some other function, I end up finding a great new dish that I’d like to make myself. When I complement the person, they say, “Oh, it’s really easy. You just need a little broccoli, some onions, a little this, and a little of that.” It’s so frustrating because you can’t repeat the dish without the recipe.
Then Wednesday I made a sausage and spinach quiche. Wouldn’t you know it, someone asked me what was in it. I think I said something like, “Uhhhhh, some sausage, eggs, spinach, cheese, uhhhh. Hmmm. Let …read more

Since their ideas are so cute, I thought you all might need some inspiration for Halloween treats this week. After all, Halloween is only a few day away.
This time, I included a short description of the things needed for each of these cupcake ideas. Perhaps that will help you save some time as you scan through the list. If you’re like me, you’d rather choose a project that you already have the supplies …read more

A few weeks ago, I gave you the recipe for the ridiculously easy blueberry cobbler. This recipe only requires five ingredients – butter, sugar, self-rising flour, milk, and fruit. Harris Teeter had a big sale on strawberries so I decided to make a strawberry cobbler. Since we were having company, I doubled the recipe. Here it is before putting it in the oven to bake.
And after baking . . .
Mmmmmm. Warm delicious goodness. And oh so easy to do.
So far, I’ve tried this recipe with canned peaches, blueberries, and strawberries. It’s simple to switch it around according to your tastes and …read more

Last week was Cuddlebug’s 4th birthday. Although we already had a party for him, I wanted to make a cake for his actual birthday. I wanted something that he would like, but that wouldn’t take a long time. And I needed a cake that was fairly easy, since I’m not a cake decorator.
A few months ago, I let you all know about the cute cupcakes from Bright Ideas. In their ideas were some baseball cupcakes. These looked very simple. I took their idea and modified it into a cake.
I simply made a regular box of cake mix (any flavor will do) and I …read more

I came across this recipe today I just had to share it with you. It’s a super easy Peach Crisp recipe from Betty Crocker. It only uses three ingredients!
For this recipe you’ll only need 1/2 cup cold butter, thawed or canned peaches, and one pouch of the Betty Crocker oatmeal cookie mix. The preparation only takes 10 minutes. It would be great to keep these ingredients on hand for a quick dessert. You just never know when someone will stop by or you’ll need something fast for the covered dish dinner at church that you forgot about.
Of course, I’m …read more

A few weeks ago, I gave you a recipe for Sausage Cranberry Quiche. I normally don’t purchase Craisins because they are a bit pricey, however, this week Harris Teeter has them on sale. The Ocean Spray Craisins are buy 2 get 3 free. I ended up with 5 packs of Craisins for only $5.58, which is $1.12 each.
If you’re interested in making the Sausage Cranberry Quiche, now would be a great time to purchase the Craisins. They also work well as snacks or in baking other items, such as muffins. It’s a great way to sneak in some healthy food …read more

I made a cake tonight for my little boy’s birthday and I saw a recipe on the side of the Pillsbury box for a lemonade cake. My kids really enjoy lemonade, so I might give this a try some time.
You will need:
Pillsbury classic white cake mix
1/2 cup water
1/3 cup oil
3 eggs
1/2 cup frozen lemonade concentrate, thawed
cooking spray
Set your oven to 350F. Prepare to keep cake from sticking by lightly coating bottom of pan with cooking spray or use shortening and a flour dusting.
Blend cake mix, water, oil, eggs, and lemonade in a large bowl until moistened. Beat with a mixer …read more

Alligator girl turned six this month and Cuddlebug is turning four tomorrow. I’m not a skilled cake decorator so I’ve been looking online for something cute yet easy that I could make for their birthdays. I just spotted some cute and creative cake ideas from Better Homes & Gardens.
These fun flower cupcakes caught my eye. They are so adorable! You simply use pipe cleaners for the flower stems. Instead of using flower shaped silicone cupcake holders it would be less expensive to cut out construction paper flowers to put under the cupcakes. I think this would create a very similar look.
Some other ideas …read more
