			<content:encoded><![CDATA[<p>If I&#8217;m going to have <strong>carrot cake</strong> then I want the real deal.  The problem is, it&#8217;s a bit time consuming and expensive to make.  You have to stand there and grate all those carrots and such.  It&#8217;s worth the effort for a special treat, but sometimes you just wish there was shortcut. </p>

<p>While I was visiting my parents this week, I saw that my mom had one of the <a href="http://www.duncanhines.com/carrotcake/" target="_blank">Duncan Hines Decadent Carrot Cake</a> mixes in the pantry and I decided to give it a shot.  There are actual raisins and shredded carrots in the package.  You simply soak them in water for about 5 minutes to soften them up and then you add them to your cake batter. </p>
<p>In my opinion, the cake was easy to make and it was great that it came with real raisins and carrots. The cake was dense and moist and had a nice spice taste.  It certainly wasn&#8217;t as good as homemade carrot cake, but was better than the other carrot mixes because this one had texture to it.  I would use the cake for everyday uses, but probably not if I were having guests.</p>
<p>For a short time, you can try the Dunkin Hines Decadent Carrot Cake for <strong>free</strong> with this <a href="http://www.duncanhines.com/carrotcake/Carrot_Cake_Rebate_Form.pdf" target="_blank">rebate form</a>.  I am not sure if this is for everyone or just for those that don&#8217;t like it.  It might be worth a shot.  Simply fill it out and send it in by April 30, 2009.</p>

<p>People with dairy allergies find that they are limited in the types of desserts and baked goods that are available to them. So many of the commercial products contain milk and eggs, so that finding a <a href="http://www.blisstree.com/keepingthecastle/dairy-free-cake-mixes-from-duncan-hines/">dairy-free cake mix like Duncan Hines</a> is a cause for celebration. </p>
<p>However, making and eating the same type of cake over and over again becomes pretty boring after some time. Thankfully, Kim, one of the readers here at Keeping the Castle, has shared some tips for using cake mixes in creative ways:</p>
<p>* bake your cake using the DH cake mix and a can of soda</p>
<p>* make it into a Jello cake by poking holes and pouring a jello (not pudding) flavor over the top</p>
<p>* put together a cobbler by mixing a pie filling and can of fruit (cherry/pear or pineapple) in a 9×13, then pour the dry cake mix over the top. Layer Fleischman’s no salt stick butter (soy) over the top and bake till browned.</p>
