A few months ago, I posted a week of Mexican recipes for your enjoyment. Last week, I made some shredded Mexican beef and wanted to give you the recipe to add to the collection.
This recipe is great for burritos, tacos, taquitos, and more. I usually cook a 3-4 pound roast with this recipe and then save half of the cooked roast for the freezer. It’s nice to pull the cooked beef out of the freezer and have meat that’s ready to use!
In a crock pot add:
roast (I use one that’s about 3 pounds.)
1 onion, sliced
1/2 bell pepper, sliced
2 beef boullion cubes
Adobo seasoning (salt …read more

Chicken Fajita Recipe

In years past, I would buy the fajita seasoning packets and sprinkle them on my fajita meat. I’ve decided that there must be an inexpensive and easy way to make my own seasoning. Here’s what I’ve decided . . .
Sorry. I don’t have an exact recipe. For the fajita seasoning I usually add:
chili powder
Adobo
garlic powder
paprika
sugar
cumin
crushed chicken bouillon cube
You can make a larger batch of the seasoning so that you have it for several meals. It’s very inexpensive to make.
To make the fajitas, you’ll need:
two onions, sliced
one bell pepper, sliced
1 or 1 1/2 lbs chicken, sliced or cut into small pieces
oil
fajita …read more

As promised, here’s the recipe for my husband’s pico de gallo (fresh salsa). It is so yummy! We prefer to make it a few hours in advance so that the flavors can marinate together.
Ingredients:
fresh diced tomatoes, preferably Roma tomatoes
fresh diced onions
fresh finely sliced cilantro (leaf and stalk)
fresh diced jalapeno pepper (to make milder, remove seeds)
minced garlic or garlic powder
lime juice
Adobo seasoning
salt (optional)
Chop up fresh ingredients and place into bowl. Add seasonings. There is not specific measurements. As you can see in the picture, the main ingredient is fresh tomatoes. All the other ingredients are according to your taste preferences. Let …read more

I do want to let you know about one of my favorite seasonings . . . Goya Adobo Seasoning. None of my Mexican recipes would be complete without it. Actually, I use this seasoning for all sorts of dishes.
To make all your dishes taste their very best, make sure you shake on Goya Adobo before cooking. Adobo’s perfect blend of garlic, …read more
