What does a gardener do when the temps are in the teens, and everything is covered with a sheet of ice? Stay inside where it’s warm and cozy and bake cookies of course!
I got some of the Bob’s Red Mill Hulled Hemp Seeds a few days ago, and I’ve been wanting to try it out. So I made some hemp seed cookies.
Here’s the recipe (it’s also on the back of the Red Mill Hemp Seed bag):
Hemp Oatmeal Cookies
Ingredients:
1/3 cup of butter
1 cup of sugar
1/2 cup of Hulled Hemp Seeds
1 egg
1 tsp vanilla
3/4 cup of unbleached white flour
1 tsp baking soda
3/4 cup of regular rolled oats
How To Make The Cookies
Cream the butter and sugar together in a bowl until smooth. Add the vanilla and egg, and blend until creamy. In another bowl combine the flour, hemp seeds, oats, and baking soda. Add the flour mixture into the wet ingredients and blend until incorporated. Form the dough into round one inch balls, and place them on a greased cookie sheet. Bake the cookies at 350` for 12-15 minutes. This recipe makes about 18 cookies.
When I made them I doubled the recipe, but had a problem with the cookies spreading too much on the first batch. Before I baked another batch I mixed them up some more and put the dough in the fridge to let it chill. I also baked the next batch on a cooking stone. They turned out much better! Not sure which part helped. It may have just been the additional mixing, since it was a dense dough especially since I doubled it.
I also cut back my baking time to 10-11 minutes, 12 or more made the cookies a little darker and crispier, and I prefer them a little lighter.
The cookies are wonderful! They have a light nutty flavor, and they’re both chewy and crunchy at the same time. I will definitely make them again.
About Hemp Seed
From Bob’s Red Mill:
Hemp seed may be one of nature’s most perfect foods. With a pleasant nut-like flavor and creamy texture, our hulled hemp seed is a nutritious and delightful addition to cereals, salads and baked goods. Hulled hemp seed is high in Omega-3 and Omega-6 essential fatty acids and an excellent source of protein- containing all of the essential amino acids.
I think I’ll try to come up with some more recipes to add this to. If you have any recipes that include hemp please feel free to share them here.

I was so surprised to see this recipe that I Googled “Is hemp seed safe to eat?”. I found an affirmative from Dr. Andrew Weil, whom I respect.
Then I went on to read the health benefits of hemp seed. Learn something new every day!
Thanks Linette.
