Mother Earth's Garden

Italian Herbal Spread

This is one of my favorite garden herb appetizers for family gatherings. It’s great to make a day or two ahead of your gathering.

2  8 ounce cream cheese, softened

Fresh basil 12-15 leaves chopped

Fresh sundried tomatoes chopped (2 Roma)

1 1/2 Tablespoon olive oil

1/2 cup Parmesan cheese

1/2 juice of a lemon

1/4 cup chopped fresh chives

Throw all the ingredients together in a bowl and mix well. This spread always tastes better after it has set for 24 hours.  Keep the spread refrigerated until 1/2 hour before serving. This is great served with a crispy toast, or with crackers.

The red and green of the herbs and tomatoes make this dish very festive for this time of year.
