My Favorite Recipe for Zucchini Bread

Its that time of year when you have zucchini growing out of your ears. It seems like there are zucchini everywhere. What’s a gardener to do? Make zucchini bread of course.
You can also use this recipe to make zucchini muffins, change the cook time to 18 minutes for muffins.
I like to make plenty of zucchini muffins, or bread. I freeze some, and give some away to friends and family. You can also freeze 2 cup bags of grated zucchini, and make the bread later.
My favorite Zucchini Bread Recipe:
3 eggs
1 3/4 cup sugar
1 cup canola oil
3 tsp vanilla
2 cups flour
1 Tbs cinnamon
1 tsp baking soda
1 tsp salt
2 cups zucchini (washed and grated)
1 cup nuts (optional)
Beat the eggs, sugar, oil, and vanilla together. Add the flour, cinnamon, soda, and salt. Stir in the zucchini and nuts. Pour into greased 9″x5″x3″ loaf pan and bake at 350` for 30 minutes. Yields one loaf, or 12 muffins.

it tastes sweet though, doesn’t it? So it’s actually a CAKE more than a BREAD. Am I right? Or can I slice it and put cheese on it?

Evi, Yes it’s a sweet bread, so you wouldn’t want to put cheese on it, unless it’s cream cheese:)
Thanks Linette – I’ll try it this afternoon after I get home from work. And I’ll use marmalade instead of cheese, I promise!
I am even thinking of doing the wild thing – filling it with jam and covering it with chocolate. Otherwise, it would be too healthy with all the zucchini in there, wouldn’t it?
