Plan Now For Summer Grilling

I love to cook fresh from the garden vegetables on the grill, or over the campfire, so I always make sure I plan a few of my favorites when I’m planting my garden in the spring.
Some of my favorite vegetables to grill, or roast over the campfire include:
- corn on the cob
- potatoes
- sweet potatoes
- eggplant
- zucchini and yellow squash (really all squash)
- beets
- sweet and hot peppers
- onion, especially sweet onions
- tomatoes
- asparagus
I can’t wait for my first fresh from the garden veggie kabob this summer. Yum! Can you tell I’m ready for summer?
I’m just getting ready to plant some pepper, eggplant, and tomato seeds for this year to be sure I have plenty of my grilling favorites.
Another little trick I’ve learned through the years is to roast peppers straight out of the garden, then throw them in a freezer bag already roasted for use later in the year.
