Preserving The Harvest~ Freezer Pickles

I have another fresh from the garden recipe for you today, this one’s for all those cucumbers you have piling up from the garden. You can eat these fresh, or freeze them for up to a year.
Freezer Pickles
- 7 cups of sliced cucumbers
- 1 large onion sliced
- 1 cup sliced green pepper
- 1 tablespoon of pickling salt (usually in the canning aisle)
- 1/2 teaspoon celery salt
- 1 cup white vinegar
- 2 cups of sugar
Combine all ingredients in a large bowl. Stir well, cover, and refrigerate for 3 days. Stir daily. Pack the pickle mixture into freezer containers, cover with the juice to within one inch of the top and freeze. Thaw before serving. These pickles can also be stored in the refrigerator for up to 8 weeks.
The cucumbers stay crisp, and I love the bite the vinegar gives this recipe. If you try it let me know what you think.
