Fresh From The Garden Meals

This time of the year I love to walk out to the garden and pick my supper. Many of our late July and August meals come straight from the garden. With a little “garnish” from the local grocery or farmer’s market.

Here are a few of my favorite summer meals:

A fresh from the garden salad
Crumb coated fried yellow squash
Corn on the cob, with all the trimmings
Green beans, new potatoes, and ham
Fresh garden salsa from the tomatoes in my garden

Garden Frittata

This time of year my garden is loaded with fresh herbs, just begging to be picked and added to some of my favorite recipes.
Unlike a French omelet, which is usually made for one, an Italian frittata can serve several people. Frittata’s can also be sliced into single portions and frozen for the week making for an easy breakfast. Just heat it in the microwave!
The best part is it’s a fabulous way to use the fresh rosemary, leeks, and basil growing right outside your front door.

Horehound Drops~ My Favorite Home Remedy For a Sore Throat

Horehound is one of my favorite herbs. I have a little patch reserved for this wonderful herb in my kitchen herb garden. Every fall I make a batch of Horehound Drops for those mid-winter sore scratchy throats, and coughs. They do seem to help, and they’re delicious.
This recipe is very much like hard tack candy in how you make it, and in the finished product.
Horehound Drops
Ingredients

2 cups of fresh horehound (include the leaves stems and flowers), or 1 cup dried horehound
2 1/2 cups water
1/2 cup corn syrup
3 c brown sugar

Making Hot Pepper Jam

One of my favorite fall snacks is hot pepper jam spread on crackers. It’s a true assault to your taste buds. You get sweet, hot, and salty all in one bite.
If you have a bunch of hot peppers, and you’ve already frozen your pepper limit, and you’ve had your fill of garden salsa, here’s a recipe to use up some of those extra hot peppers.
Hot Pepper Jam
1 cup hot banana peppers (you can use mild if you want to make a sweet jam without the heat)- remove the stems only

Zucchini Cobbler

My sister gave me this delicious way to use up some of those extra zucchini laying around on your countertops. It tastes like an apple cobbler (you could easily substitute apples for the zucchini later in the fall). The crust is crumbly and crunchy.

Zucchini Cobbler Recipe:

Ingredients:
Filling

5-6 cups of chopped, peeled, seeded zucchini
1/3 cup lemon juice (the juice of about 2 lemons)
1/2 cup sugar
1/2 tsp. cinnamon
1/4 tsp. nutmeg

Crust

2 cups flour (I used a 50/50 blend of white and whole wheat)
1 cup sugar
1/2 cup butter
1/2 tsp cinnamon
