My son goes back to school tomorrow morning. I’m excited, but sad at the same time. We’ve had a wonderful summer, and I’m always thankful that my job gives me the flexibility to spend plenty of time with him when he’s out of school.
On the other hand, I get a ton more work done while he’s at school during the day.
He enjoys packing his lunch, and I enjoy trying to find fun things to put in his lunch, so he doesn’t have to eat the same old thing day after day.

I have another easy lunch idea for you today, that your kids can help you make, this recipe is from Love Your Veggies. They have more great recipes at their website to get your children motivated to eat their vegetables.
This recipe is a wonderful summer lunch idea that your kids can help you make. If you grow a garden you can walk out to the garden with the children, and pick a few peppers and tomatoes. It would be a great lesson in where their food comes from, and eating healthy.

When my son’s out of school he loves to “create” lunch. I say create because he can’t just make something simple, he likes to put ingredients together to create a mini lunch masterpiece. When I saw these recipes for guacamole faces from Wholly Guacamole, I thought of him, and how much fun he would have recreating them himself for our lunches this summer.
Don’t tell the kids, but they’re healthy too! Guacamole can add a serving of fruit to their day.
