Cucumber Salad With Fresh Herbs

Cucumber salad is one of my favorite summer dishes, and it’s so easy to make ahead for a summer party of backyard barbecue. Here’s a recipe for cucumber salad from Gaea that’s loaded with fresh herbs and spices.

I love to use summer recipes that feature fresh herbs for summer entertaining. The flavors of the fresh herbs are fabulous.

Cucumber Salad with Fresh Herbs, Orange Segments and Citrus Dressing

Preparation time: 15 minutes ∙ 4 servings

  • 6 small cucumbers
  • Coarse Salt

For the Dressing:

  • ½ cup Gaea DOP sitia, Crete extra virgin olive oil
  • Juice of 1 lemon
  • Salt
  • Freshly ground black pepper
  • Freshly ground pink pepper
  • 2 large oranges
  • 1 tbsp. fresh rosemary
  • 1 tbsp. fresh oregano
  • 1 tbsp. fresh thyme
  • 1 tbsp. fresh mint

How To Make It:

  1. Wash cucumbers and oranges well.
  2. Peel oranges, remove white membrane and cut flesh in thin slices.
  3. Thinly slice cucumbers with a mandolin.
  4. Combine salt and two kinds of pepper in glass or stainless steel bowl and add lemon juice.
  5. Slowly add olive oil while stirring constantly with wire whisk.
  6. Combine dressing with orange slices and fresh herbs.

To serve:

Arrange cucumbers in dishes and pour over prepared dressing. Sprinkle with a little coarse salt.
