Guacamole

My family loves guacamole. We make it for almost every party or occasion, and even have family “guacamole night” where we much and play games. The best part is most guacamole recipes are so easy to make. My five year old makes ours – we give him a potato masher to “smoosh” the guacamole and he has at it. Here’s my recipe:
INGREDIENTS
- 2 avocados
- 1/2 lemon, juiced
- 2 tablespoons chopped onion
- 1 tablespoon chopped garlic
- 1/2 teaspoon salt
- 2 tablespoons olive oil
DIRECTIONS
- Cut the avocados into halves. Remove the seeds, and scoop out the pulp into a small bowl. Use a fork to mash the avocado. Stir in lemon juice, onion, salt, and olive oil. Cover the bowl, and refrigerate for 1 hour before serving.

We have fajitas or tacos or quesadillas and it’s my almost six year old’s job to make the guacamole – he uses a potato masher. Yesterday we threw all the ingredients in the Magic Bullet and in about 10 seconds we had a nice, smooth guacamole. I don’t know if it’s the Magic Bullet or we just got it right, but my whole family agreed, it was the best guacamole we ever made. Oh and I also used the Magic Bullet to grate the cheese.
